梅酒基底則採用來自日本紀州南高梅和中性烈酒,釀造工序由準備梅子開始,先逐一在每顆南高梅上刺孔,使梅味更易滲出,刺好之後,就在酒裡靜候一年的風味累積。一年過後,濾出梅酒液,再加入酵母和糖,放置一個月,進行「二次發酵」程序,與釀造傳統香檳所採用的悠久技術「香檳法」一樣,賦予氣泡梅酒獨有的儀式感,將梅子的酸味與蜂蜜的甜味微妙地結合在一起,形成平衡、細緻的風味。質地細膩的氣泡、奢華香氣以及柔和的口感令人一飲難忘。
經歷發酵工序後,需要將瓶子倒轉放置一個月左右,將吃飽糖的酵母渣沉澱在瓶口,便可以進行「除渣」(Disgorgement) 的步驟。「除渣」時,需急速冷卻瓶頂位後開瓶,讓瓶內的壓力將形成固體的酵母渣噴出,然後加入本地生產蜜糖至Demi-Sec。

About thence. 08 | Sparkling Nanko Ume Honeyed Elixir
The acclaimed thence.08—a secondary fermentation sparkling honeyed Nanko Umeshu—is back this Christmas in a limited release of 300 bottles.
Crafted with Nanko plums from Kishu, Japan, each plum is pierced to enhance flavor extraction before steeping for a year. After filtering, yeast and sugar are added for a secondary fermentation, following the traditional "Champagne method." This process harmoniously blends the plum's tartness with honey's sweetness, resulting in a balanced and delicate flavor profile. Fine bubbles, a luxurious aroma, and a smooth texture make it unforgettable.
Post-fermentation, bottles are inverted for about a month to settle yeast sediment at the neck. The "disgorgement" step involves chilling the bottle neck and opening it to expel the solidified yeast sediment under pressure. Local honey is then added to achieve a demi-sec sweetness level.
